- 4 scallions chopped
- 2 garlic cloves peeled and crushed
- 1 inch fresh ginger peeled/ grated or chopped
- 1 fresh jalapeño pepper stemmed, seeded, and chopped
- 2 tbsp fresh thyme clean and chopped
- 2 tsps kosher salt and pepper
- 1 tsp coriander ground
- 2 tbsps coconut oil
- lime juice to taste
- 2 pounds raw chicken
- 1. Take all the ingredients besides the chicken and lime and put them in a blender.
- 2. Blend all of those ingredients together to make a paste: scallions, garlic cloves, ginger, jalapeno pepper, thyme, salt, pepper, coriander, and coconut oil.
- 3. Use 3/4 of the paste to coat the chicken. Put the coated chicken and rest of that paste into the crockpot.
- 4. Set aside the rest of the 1/4 paste in the refrigerator.
- 5. Cover and cook the chicken coated with the 3/4 paste in a crockpot on low for 3-4 hours.
- 6. (optional) Take the remainder 1/4 of the paste and heat up on the stove over low heat. Then remove the cooked chicken from the crockpot and brush on fresh paste. Then broil under a broiler for 5-10 minutes in the oven.
- 7. Then use the fresh lime to garnish the chicken.
The broiling portion of this recipe is not needed... but it is quite tasty.
This chicken is truly delicious and nutritious. I have also found that you can add different spices and herbs to this recipe to change it up. I also like to add extra coriander, but that is because I like coriander.
