Super Easy But Super Healthy Beet, Carrot, and Cabbage Salad
This is one of my go-to salads because it is easy to make, easy to store, and great on the body. It is geared towards supporting the liver and detoxification but also has high antioxidant powers. It is rich in many vitamins and minerals such as magnesium and will feed your body and mind.
Ingredients
- 2 Large organic Beet Peeled
- 4 Large organic Carrots Peeled
- 1 Cup Fresh Parsley
- 1 Head organic Cabbage Chopped
- 1/2 Cup Flax or Chia Seed
- 3/4 Cup Pomegranate Juice
- 1/2 Cup extra virgin olive oil
- 1/4 Cup Honey
- 1 tbsp apple cider vinegar
- 1 tbsp Dijon Mustard

Instructions
- You can chop everything up by hand. I use a food processor and put everything in there and finely chop it.
- Store it in your fridge
- You can also top it with sliced apples, pears, pomegranate fruit, pumpkin seeds, or pine nuts. But I add in whatever I want to top it off when I am ready to eat it.
- I love to make it with a Pomegranate Vinaigrette Dressing: 1. In a large measuring cup, combine Pomegranate juice, honey, vinegar, and mustard. 2. Whisk together until well-combined. 3. Continue to whisk as you add in olive oil to emulsify. 4. Pour dressing into serving container and set aside.
